Tofu Peanut Butter Mousse.

A tasty high protein three ingredient dessert that the whole family will love! You can switch it up by adding Nutella or melted chocolate as an alternative to peanut butter, and serve in glasses or ramekins as opposed to Easter eggs if you wish.

RECIPE

Makes: Two portions

Time to Make: Ten minutes to prepare. Sixty minutes to set.

INGREDIENTS

300g silken tofu (can use any tofu but the silkier the better)
4 tbsp maple syrup or honey
2 large tbsp peanut butter
1 packet mini eggs
Easter egg (optional)

METHOD

  1. Tip the tofu out of its container and pay dry with kitchen towel

  2. Add everything to a blender and blitz until silky smooth

  3. You will need to pause half way to scrape down the sides and blend again

  4. Roughly chop some mini eggs and stir through the mousse

  5. Pour into a carefully halved Easter egg and set in the fridge for an hour before serving
