We wanted to share this recipe with you as it really is the ultimate feel good dish, and it’s not a recipe that many people think to cook. Give this a try to treat yourself, and your family or friends, to something a little different to your typical dinner. The creaminess of the sauce, combined with the flaky fish and vibrant vegetables really is like a little piece of heaven. Ideal for seafood lovers, or lovers of tasty food - so that’s everyone, we’d imagine.

RECIPE

Makes: Enough for two

Time to Make: 60 minutes

INGREDIENTS

Prawns 200g
Smoked Haddock 2 fillets
Cod 2 fillets Fresh or frozen
Milk 300ml
Sweetcorn 1 large tin
Butternut Squash 500g
Onion 1
Sourdough 50g (approx. 1 slice) Optional to serve

METHOD

  1. Chop the butternut squash into small chunks, and either steam (10 minutes) or roast (25-30 minute at 200°C) until softening

  2. Blend half of the sweetcorn with 50ml of the milk until smooth

  3. Slice the onion and soften in a pan before adding the creamed sweetcorn, whole sweetcorn, squash and milk

  4. Top with the prawns and fish and simmer until all seafood is cooked

  5. Flake the fish through the chowder and serve with sourdough - this is optional, but we think it completes the dish
