These burgers are our A B S O L U T E favourites, and are affectionately known as ‘Friday Night Burgers’ - why? Because Fridays are the days for a treat, and these are the ultimate treat.

RECIPE

Makes: 2-4 burgers depending on how big you like them

Time to Make: 25 minutes

Difficulty Rating: Easy

INGREDIENTS

125g Beef Mince
150g Mushrooms
40g Blue Cheese
2-3 Garlic Cloves
1 tsp Olive Oil
Pepper

METHOD

  1. Add the whole mushrooms to a dry pan (no oil) over a medium heat and cook until they are starting to turn golden and smell toasty

  2. Meanwhile add the whole garlic cloves to a pan over a medium heat with the oil and a little salt. Cook until just turning golden - don’t let them go too dark or they will taste burned

  3. Add the mushrooms, garlic, beef mince and crumbled blue cheese to a food processor with a good grind of pepper. Pulse until the mushrooms have been sliced up and everything is incorporated

  4. Shape into burgers and add to a pre-heated pan or BBQ, caramelising the outside and cooking to your liking. Serve with your choice of accompaniments (though the below are Simon’s favourites!)

    These can be prepared ahead of time and refrigerated for 24 hours - great if you’re planning a socially distanced BBQ with friends.

    To Serve, Romaine Lettuce Leaves, Homemade Ketchup, and some sweet potato fries
