Who doesn’t love pizza right?

But let’s face it, it’s not always the most healthy option and can leave you feeling a little bloated. What if I were to tell you that you can have all that oozy cheesy goodness with a rich and flavourful tomato sauce, packaged in a slightly higher protein way?!

This pizza chicken recipe has evolved over the years to now encompass the best of crispy breadcrumbed chicken, a smoky tomato sauce and a good topping of melty crispy cheese! Now just tell me that you won’t enjoy that?!

Add some veggies and you have a tasty balanced meal that will keep you full and fuelled for anything you have planned.

RECIPE

Makes: 4 portions

INGREDIENTS

Chicken 4 breasts
Baby tomatoes 350g
Onion 1
Garlic 1-3 cloves
Chorizo 60g
Eggs 1
Breadcrumbs 50g
Low-Fat Mozzarella Cheese 100g
Tinned Tomatoes 1⁄2 a tin
Olive Oil 2 tsp max Optional for cooking
Mixed Veg 3-4 large handfuls to serve steamed, raw, grilled

METHOD

  1. Add the onion and chorizo to a pan until the onion is soft

  2. Add the fresh and tinned tomatoes and garlic and simmer

  3. Dip the chicken breasts in the beaten egg before coating in breadcrumbs

  4. Lightly fry the coated chicken until the outsides are turning golden

  5. Add the chicken to a baking dish, top with the tomato sauce and place sliced mozzarella over the top

  6. Bake at 180 Fan for about 30 minutes until the chicken is cooked through

  7. Grill for the last 5 minutes to make the cheese crispy

  8. Serve with veg or salad and enjoy
